Each harvest, Finca Monteblanco, known as an experimental farm, produces microlots that serve as competition coffees around the world. Monteblanco’ s Rodrigo Sanchez has pioneered Cold Fermentation, which consists of depulping freshly harvested ripe cherries, and transferring them to a cold room for extended fermentation. This lot is a benchmark for this unique method of developing complexity and lavor in the cup.
